Clafoutis – I am pretty sure is French for “can’t stuff it up“.
Its the perfect dessert, you make in the blender and then you stick in the oven, its my kind of cooking!
I’ve used adaptions of this recipe from the Healthy Food Guide a number of times now and I’m pretty darn sure you can’t stuff it up and its so adaptable! I often cook one of these when I’ve got something else going into the oven such as a lasagne.
In summary the basic recipe is as follows –
- 500g apricots, halved, stones removed
- 1 tablespoon reduced-fat spread, to grease
You grease your dish and then place in the apricots. I usually use canned fruit. I’ve used canned peaches and pears in the past. One time I used pineapple. This time, I used Lychees. A larger can works best or use two 400gm cans. Don’t forget to drain the fruit first if you are using canned.
To prepare, and this is the best bit, you simply put all the following into a blender and process for around a minute then pour it over the fruit.
- 1/2 cup flour
- 1/4 teaspoon salt
- 2 eggs
- 4 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 3/4 cup trim milk
I never have ground cinnamon and I often sub out the vanilla for another extract or essence, tonight I used almond and I’ve used coconut essence in the past too.
For the milk, I’ve subbed almond and soy in the past and both works fine. I’d put money on it working with an egg substitute if you were vegan – haven’t tried that though!
So where were we? Oh yes, pop it in the oven at 200C for around 30 minutes. Voila!
We usually just eat it as is, but it would be great with ice cream, cream, mixed berries etc. Serves 4-6.
Its reasonably healthy as far as a dessert goes and tasty!
